KNA1 holds one row per customer in each client: the name, address, phone and tax numbers that apply across company codes and sales areas. It's one of the first tables to mask in any SAP test system.
The fields below carry personal data or point to it. Field names are SAP's; meanings are summarized.

Not in KNA1. Email addresses sit in ADR6, linked through the address number in ADRNR, so mask ADR6 with the rest of the address.
Yes. The business partner is the leading object in S/4HANA, but KNA1 still exists and customer-vendor integration keeps it in step with BUT000. Programs and reports still read it.
Company names and addresses aren't personal data under GDPR, but sole traders' are, and phone and contact fields often lead to a person. Mask the lot unless you can separate them reliably.
